You can choose between sweet or sour sambal, and of course I went for the sour one. Eggplant is my favorite vegetable, so I started with that—and it was really good. Then I moved on to the chicken, eating the local way with hands (after washing them right there). The sambal gives everything an amazing spicy kick.
